I was thinking of frying it, then combining it with fried mushrooms and steamed vegetables, or maybe throwing some of it into a salad..... Any other ideas?
I bought some lotus root 2 days ago. Does anyone have any idea what can be done with it?
Fresh lotus root can be used in many ways. They are great added to any stir-fry. To me the flavor and texture is very reminiscent of water chestnust. They can also be added to soups. I read one article that says the Japanese use them as we use potatoes in dishes. One of my favorites, however, is lotus root salad with ginger/sesame dressing.
1 lb fresh lotus root
1/2 teaspoon grated fresh ginger
4 teaspoons sugar
1 1/2 tablespoons soy sauce
2 tablespoons white vinegar
1/2 tablespoon sesame oil
1 tablespoon fresh coriander
Toasted sesame seeds
Rinse lotus roots with cold water. Trim and discard both ends of the bulb. With a vegetable peeler, peel the skin. Diagonally cut thee root into 1/8 inch thick slices; immediately plunge slices into acidulated wa-ter. Drain. Put lotus roots into a heatproof bowl. Pour enough boiling water to cover; let sit for 5 minutes. Drain. Rinse with cold water. Pat dry. Refrigerate until chilled.
For the dressing: in bowl, combine thoroughly the ginger, sugar soy sauce, vinegar, sesame oil and cori-ander. Put lotus root slices into a shallow bowl; pour dressing over lotus roots. Top with sesame seeds. Serve chilled
Reply:You can try use lotus root to make a salad.
Thinly slice lotus root, slice celery in a bowl, add some lemon juice, olive oil, a little honey, a pinch of sea salt and black pepper, garnish with parsley if u wish, toss all together and let it develop flavor for say 5 mins.

Reply:My favorite thing to do with lotus root is slice it very thinly, salt it and deep fry it like potato chips...delicious!
Reply:You could also shred it and make it like potato pancakes,
or blanch it for l minute and use in a slaw salad.
