I cooked some lotus stems today and found the taste and texture quite interesting. I was wondering if one could make some cool subzi out of it, I could add it in my restaurant menu:). Anybody with a Indian recipe for preparing the stem....kindly help !!!
Is there a particular spice or gravy(Indian) that goes well lotus stem?
If you're looking for unique and inventive, replace the potato in this recipe with Lotus Stem:
ALOO SUBZI
Ingredients:
3 or 4 medium potatoes
1 small onion
1/3 teaspoon Garlic powder
2/3 ginger
1 teaspoon Turmeric
3 tablespoon vegetable oil
salt to taste
Optional:
2 cloves
1 whole cardamom
1 whole bay leaf
Prep:
1 Boil potatoes until tender.
2 Peel and crush potatoes with a fork.
3 Chop onion and brown in oil.
4 Add potatoes, spices and ? c. water and stir well.
5 Lower heat and cook for 5 to 7 minutes.
